Sandwich with Elliniki Salad and breaded chicken

Ingredients for 4 sandwiches
- 1 bag Elliniki salad "From the Vezyroglou Farm"
- 2 chopped onions
- 1 tbsp. olive oil
- A little lemon juice
- Salt and pepper
- 4 breaded chicken fillets
- 8 slices of white bread for toast, coarsely chopped
- 1 tbsp. Dijon mustard
- 1 tbsp. BBQ sauce
METHOD
- Wash and dry the salad leaves. Put them in a bowl, add the onions, olive oil, salt, pepper and mix. We will use this salad not only in the sandwich but also as a side dish.
- Clean the crust from the slices of bread.
- Fry the chicken in a fryer (or pan) at 170 ° C until well cooked. Alternatively, we can bake the fillets in a preheated oven at 180 ° C for about twenty minutes. When the chicken is ready, let it come to room temperature.
- Put the four slices of bread in a row and spread the mustard.
- Put one fillet in each slice. We put the Elliniki leaves on top.
- Spread the BBQ sauce on the rest of the bread and close the sandwiches, cut in half and serve with the rest of the salad on the side.
