Valeriana Mix salad with chicken curry, corn and yogurt sauce

INGREDIENTS
Materials for 4 people
- 1 bag of Valeriana Mix salad "From the Vezyroglou Farm"
- 1 cucumber
- 2 onions, finely chopped
- 4 carrots, in strips
- 200 gr. boiled corn
- Fresh aromatic herbs
For the chicken
- 1 large onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 tbsp. olive oil
- Salt and pepper
- 1 tbsp. curry
- 1 tbsp. fresh ginger, grated
- 2 chicken fillets (600 gr.) In pieces
- 2 tbsp. yoghurt
- 100 gr. raisins
- Fresh aromatic herbs
For the sauce
- 2 tbsp. yoghurt
- 1 lime, its juice
METHOD
- We will use a deep frying pan with a lid to prepare the chicken. Add the onion, garlic, olive oil, salt and leave on a medium heat for about ten minutes, until the onion is soft.
- Add the curry, the ginger, the chicken and leave on a medium heat, with the lid, until the chicken is well cooked. When it is ready, add the yogurt, raisins, fresh herbs, stir and let it come to room temperature.
- We prepare the salad. Wash and dry the leaves of Valeriana Mix.
- Cut the cucumber vertically in half, remove the seeds and cut into slices. Mix the salad with the cucumber, the onions, the carrots, the corn, the herbs and mix.
- Prepare the sauce by mixing the yogurt with the lime juice.
- Put the salad, the chicken, the yogurt sauce in a bowl, mix and serve
