Piperati salad with white vegetable cheese and green apple

INGREDIENTS
Ingredients for a large salad / 4 people
- 1 bag Piperati Salad "From the Vezyroglou Farm"
- 2 spring onions, finely chopped
- Fresh aromatic herbs
- 1 cucumber
- 1 green apple
- Lemon juice
For the vegetable cheese
- 200 gr. white vegetable cheese, diced
- 2 cloves garlic, finely chopped
- 1/2 tbsp. paprika
- 1/2 tbsp. oregano
- 1 tbsp. olive oil
- 1 tbsp. soy sauce
For the soy sauce
- 1 tbsp. red wine vinegar
- 1 tbsp. soy sauce
- 4 tbsp. olive oil
METHOD
- Put the white vegetable cheese, garlic, paprika, oregano, olive oil, soy sauce in a bowl and mix.
- Pass through a hot pan for a few minutes, until caramelized. Set aside until served.
- We prepare the salad. Wash and dry the Piperati leaves, onions, herbs and mix. Cut the cucumber vertically in the middle, remove the seeds (with a teaspoon) and cut into slices.
- Cut the apple into slices and sprinkle with lemon juice.
- Prepare the sauce by mixing all the ingredients. Pour over the salad with the sauce, add the white cheese, stir and serve.
