Salad with kale, parmesan and croutons made of Thessaloniki Koulouri

INGREDIENTS

Ingredients for a great salad

  • 1 bag of Kale mix salad "From the Vezyroglou Farm"
  • Fresh aromatic herbs
  • 2 spring onions
  • 4 eggs
  • 100 gr. grated Parmesan
  • 1 koulouri

For the sauce

  • 6 tbsp. lemon juice
  • 1 tbsp. tahini
  • 1 tbsp. spicy mustard
  • 1 clove garlic
  • 300 gr. olive oil
  • Salt and pepper


    METHOD
    • Wash and dry the salad and spices well. Finely chop the onions and stir.
    • Put the eggs in boiling water and leave them for 6.5 minutes. Transfer them to ice water and leave them to cool.
    • Prepare the sauce. Put the lemon juice, the tahini, the mustard, the garlic in the multi and grind. Add the olive oil slowly, until you have a nice firm sauce.
    • We prepare the salad. In a bowl we put the kale mix leaves, the onions and the spices, we add the grated parmesan, 4-5 spoons of the sauce that we have prepared, the croutons and mix. Transfer to a salad bowl or on plates. Divide the eggs and serve.
