Salad with Baby Spinach Leaves with lentils, cherry tomatoes and avocado

INGREDIENTS

Ingredients for a large salad / 4 people

  • 1 bag with Baby Spinach Leaves "From the Vezyroglou Farm"
  • 2 onions, finely chopped
  • Fresh aromatic herbs
  • 200 gr. lentils, boiled
  • 1 red pepper, finely chopped
  • 20 cherry tomatoes, cut in half
  • 1 avocado, diced
  • Salt and pepper
  • 1 tbsp. olive oil
  • A little lemon juice

For the yogurt sauce

  • 3 tbsp. yoghurt
  • 1 tbsp. mayonnaise
  • 2 tbsp. lemon juice
  • Fresh herbs
METHOD
  • Wash and dry the Spinach Leaves and herbs well. Finely chop the onions. Put all the salads in a bowl and mix. In another bowl put the lentils, pepper, cherry tomatoes, avocado, salt, pepper, olive oil, lemon juice and mix.
  • Prepare the yogurt sauce. Beat all the ingredients together in the multi until you have a nice firm sauce.
  • Mix the salad with the yogurt cream. Add the lentil mixture, stir and serve.
