Salad with spinach baby leaves, cherry tomatoes and cottage cheese (katiki)

The baby spinach leaves are tender and are the ideal base for this rich salad.

INGREDIENTS

Ingredients for a large salad / 4 people

  • 1 bag of baby spinach "From the Vezyroglou Farm"
  • 2 spring onions
  • 20 cherry tomatoes cut in half
  • Parsley
  • Mint

For the sauce

  • 1 tbsp. mustard
  • 1 tbsp. honey
  • 3 tbsp. red wine vinegar
  • 9 tbsp. olive oil
  • Salt and pepper

    For serving

    • 4 large figs cut into slices
    • 200 gr. Katiki cheese


      METHOD
      • Wash and dry the salad and spices well. Finely chop the onions and cut the cherry tomatoes in half.
      • In a bowl, prepare the salad dressing. Mix all the ingredients well, leaving the olive oil for the end. Add the olive oil slowly, stirring until you have a nice sauce.
      • In another bowl, prepare the salad. Add a little sauce, half the spinach, the onions, half the cherry tomatoes and the herbs. Put the rest of the sauce, the other ingredients (except the figs and the cottage cheese).
      • Stir, divide into portions, put the figs and the katiki cheese and serve.
