Salad with baby spinach leaves, halloumi cheese and pomegranate seeds

INGREDIENTS

Ingredients for a large salad / 4 people

  • 1 bag of spinach "From the Vezyroglou Farm"
  • 2 spring onions
  • 200 gr. Halloumi cheese
  • 2 cucumbers
  • 1 cup pomegranate seeds
  • Salt and pepper

For the sauce

  • 1 lemon, its juice
  • 3 tbsp. olive oil

    For the yogurt cream

    • 4 tbsp. yoghurt
    • 1 tbsp. mayonnaise
    • Fresh mint
    • Fresh dill

      METHOD
      • Wash and dry the salad and spices well. Finely chop the onions. Mix well.
      • Cut the halloumi into slices and pass it through a hot pan, without any fat. Let it take color on one side, turn it and leave it on the other. It will take about three minutes on each side. When the cheese is ready, leave it to cool and cut it into cubes.
      • Cut the cucumbers in half and clean the seeds. Cut them into slices.
      • Prepare the sauce. Beat all the ingredients together.
      • Prepare the yogurt cream. Put all the ingredients in the multi and beat until you have a nice cream.
      • We prepare the salad. Put some of the sauce in a large bowl, put half of our salad ingredients (spinach, onions, cucumber, pomegranate), put the rest of the sauce, the rest of our ingredients, salt and pepper and mix.
      • Put one spoonful of yogurt sauce in four dishes. Divide the salad, the halloumi and serve.
