Salad with Baby Wild Rocket Leaves, roasted halloumi and red peppers

INGREDIENTS

Ingredients for a large salad / 4 servings

  • 1 bag Baby Wild Rocket Leaves "From the Vezyroglou Farm"
  • Fresh aromatic herbs
  • 2 spring onions
  • 2 tbsp. olive oil
  • Lemon juice
  • Salt and pepper

    For serving

    • 200 gr. Halloumi cheese in thin slices
    • 200 gr. roasted peppers, in strips
    • 4 slices of village bread

      METHOD
      • Wash and dry the Wild Rocket Leaves and herbs. Finely chop the onions. Add the herbs, olive oil, lemon juice, salt, pepper and mix. Pass the halloumi through a hot pan without any fat. Toast the bread.
      • Mix the salad with the peppers and the halloumi. Serve the salad with the toast on the side.
