Wild Rocket Leaf Salad with Green Apple, Smoked Trout and Tahini Sauce

INGREDIENTS
Ingredients for a large salad / 4 people
- 1 bag Baby Wild Rocket Leaves "From the Vezyroglou Farm"
- 2 onions, finely chopped
- Fresh aromatic herbs
- 1 green apple
- 1 fennel
- 4 radishes, thinly sliced
- Lemon juice
- 1 fillet (200 gr.) Smoked trout
For the tahini sauce
- 1 tbsp. tahini
- 2 tbsp. water
- 2 tbsp. red wine vinegar
- Salt and pepper
METHOD
- Wash and dry the Wild Rocket Leaves and herbs well. Finely chop the onions. Put all the salads in a bowl and mix. Wash and cut the apple, the fennel and the radishes into thin slices. Sprinkle with lemon juice.
- Prepare the tahini sauce. Mix all the ingredients together until you have a liquid sauce.
- We prepare the salad. Put the salad, apple, fennel and radishes in a bowl. Add the sauce and mix well. Serve with trout.
